  • 1 tablespoon all-purpose flour optional, for thickening
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh parsley finely chopped (optional, for garnish)
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Prepare the Pasta: Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and reserve approximately 100 ml of pasta cooking water to adjust the sauce later if necessary. Set aside.
  • Sauté the Aromatics and Beef: Heat olive oil in a large skillet over medium heat. Add the minced garlic and finely sliced onion, allowing them to cook until translucent and fragrant. Incorporate the ground beef, season with salt and pepper, and cook until browned and fully cooked through. Remove excess fat if needed.
  • Prepare the Garlic Parmesan Sauce: In a separate saucepan, melt the butter over low heat. If a thicker sauce is desired, whisk in the flour to create a light roux. Gradually pour in the cream while stirring continuously to achieve a smooth texture. Add the grated Parmesan cheese and continue stirring until melted and the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.
  • Combine the Beef and Sauce: Pour the garlic-Parmesan sauce over the cooked beef mixture in the skillet. Stir well to blend the flavors, ensuring the beef is evenly coated in the creamy sauce.
  • Incorporate the Pasta: Add the cooked rotini pasta to the skillet and gently toss to combine. Use a small amount of the reserved pasta water to loosen the sauce if necessary, ensuring every piece of pasta is enveloped in the rich, creamy coating.
