Ingredients
  

  • 1 pound fresh green beans trimmed and cut into bite-sized segments
  • 4 cups baby potatoes or 4 large potatoes, peeled and diced evenly
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 packet 1 oz ranch seasoning mix
  • 6 slices bacon cut into small pieces
  • 1 cup low-sodium chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil optional, for sautéing if additional fat is needed

Instructions
 

  • Cook the Bacon: In a large skillet or Dutch oven set over medium heat, render the chopped bacon until it becomes crisp and golden. Once fully cooked, use a slotted spoon to transfer the bacon pieces to a paper towel-lined plate, reserving the rendered fat in the pan.
  • Sauté the Aromatics: To the reserved bacon drippings, add the diced onion. Sauté for approximately 5 minutes, or until the onion becomes soft and translucent. Incorporate the minced garlic and cook for an additional 1 minute, or until aromatic, stirring frequently to prevent burning.
  • Brown the Potatoes: Introduce the diced potatoes into the skillet with the sautéed onion and garlic. Cook for 5 to 7 minutes, stirring occasionally, until the potatoes begin to develop a light golden color on the edges.
  • Add Green Beans and Seasonings: Incorporate the prepared green beans into the skillet. Sprinkle in the ranch seasoning mix, dried thyme, and dried rosemary. Stir thoroughly to ensure the vegetables are evenly coated with the seasoning blend.
  • Simmer the Mixture: Pour in the chicken broth, ensuring the liquid evenly distributes throughout the skillet. Bring the mixture to a gentle simmer. Reduce the heat to low, cover the skillet with a lid, and allow to cook for 15 to 20 minutes, or until both the potatoes and green beans are tender.
  • Finish and Season: Once the vegetables are fully cooked, return the previously reserved bacon to the skillet. Stir to combine. Taste the dish and adjust seasoning with additional salt and pepper, if necessary.
