Ingredients
  

  • Four tilapia fillets approximately one pound total
  • One cup roasted red peppers jarred or homemade
  • Three cloves garlic minced
  • Two tablespoons extra virgin olive oil
  • Two tablespoons fresh lemon juice
  • One-quarter cup low-sodium chicken broth
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

  • Preheat the Oven — Heat the oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
  • Prepare the Sauce — Blend the roasted red peppers, garlic, olive oil, lemon juice, salt, and pepper until smooth.
  • Assemble the Dish — Spread half of the sauce into the baking dish, place the tilapia fillets on top, and coat with the remaining sauce.
  • Bake the Fish — Bake for 20–25 minutes until the fish flakes easily with a fork.
  • Finish and Serve — Garnish with fresh basil or parsley before serving.
