  • 500 grams of chicken breasts finely sliced
  • 1 tablespoon of olive oil
  • 1 small onion finely minced
  • 2 cloves of garlic minced
  • 1 teaspoon of ginger minced
  • 1 tablespoon of tomato paste
  • 1 tablespoon of low-sodium soy sauce
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of cinnamon powder
  • 1/2 teaspoon of paprika
  • 1 teaspoon of diet sugar optional
  • 1/4 cup of chicken broth or water
  • 1/2 cup of fat-free coconut milk
  • A pinch of black pepper freshly ground
  • 1/4 cup of cilantro finely chopped, for garnishing

Instructions
 

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Add the minced onion to the skillet and sauté until it becomes translucent and slightly golden in color.
  • Incorporate the minced garlic and ginger into the skillet, continuing to sauté until the mixture emits a fragrant aroma.
  • Introduce the sliced chicken breasts to the skillet, sautéing until the chicken is uniformly browned on all sides.
  • Mix in the tomato paste, soy sauce, turmeric, cinnamon, paprika, and black pepper, ensuring all ingredients are thoroughly combined.
  • Pour in the chicken broth or water, and reduce the heat to allow the mixture to simmer gently for 5-10 minutes, or until the chicken is tender.
  • Add the coconut milk to the skillet, stirring well. Increase the heat to bring the mixture to a boil for an additional 5 minutes, or until the sauce thickens to a creamy consistency.
  • Remove the skillet from the heat, transfer the chicken to a serving dish, and garnish with chopped cilantro before serving.

Notes

To reduce calories further, consider reducing the amount of olive oil or using reduced-fat coconut milk.
