Ingredients
  

For the Chicken:

  • 4 small to medium chicken breasts or 2 large chicken breasts, halved
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Crispy Coating:

  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs

For the Creamy Garlic Sauce:

  • 3 –4 cloves garlic minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • ½ cup grated Parmesan cheese
  • 1 cup spinach chopped (optional)

Instructions
 

  • Prepare the Chicken: Begin by seasoning the chicken breasts generously with salt and pepper on both sides. This ensures a flavorful base for the dish.
  • Prepare the Coating: In a shallow dish, combine the grated Parmesan cheese and panko breadcrumbs. Mix well to create a uniform coating. Dredge each chicken breast in this mixture, pressing lightly on both sides to ensure even coverage.
  • Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the coated chicken breasts. Sear each side for approximately 3–4 minutes until a golden and crispy crust forms.
  • Prepare the Sauce: Reduce the heat to medium-low and add the minced garlic to the skillet. Sauté for approximately 1 minute, ensuring the garlic becomes fragrant without burning. Once fragrant, pour in the cream and add the Italian seasoning or oregano. Stir to combine the ingredients.
  • Incorporate Spinach and Parmesan: If using spinach, add it to the skillet at this stage, allowing it to wilt into the sauce. Stir in the grated Parmesan cheese, ensuring it dissolves fully and thickens the sauce.
  • Finish Cooking the Chicken: Cover the skillet and allow the chicken to cook for an additional 8–10 minutes, or until the internal temperature reaches 165°F. This ensures the chicken is thoroughly cooked while remaining tender and juicy.

Notes

Serve: Once the chicken has reached the desired internal temperature, remove from the skillet. Plate the chicken and spoon the creamy garlic sauce generously over the top. Serve immediately and enjoy.
